Banana Cream Pie

Delicious and simple. If you are bringing this to a party you may want to make 2. This pie is guaranteed to go fast!

Ingredients

Crust
1 refrigerated pie crust
Filling
¾ cup sugar
¼ cup cornstarch
¼ teaspoon salt
3 cups milk
3 egg yolks, slightly beaten
2 tablespoons margarine or butter
2 teaspoons vanilla

Heat oven 450°F. Prepare pie crust for one-crust baked shell using 9-inch pie pan. Bake at 450°F. for 9 to 11 minutes or until light golden brown. Cool 30 minutes or until completely cooled.

In medium saucepan, combine sugar, cornstarch and salt; mix well. Stir in milk until smooth. Cook over medium heat until mixture boils and thickens, stirring constantly. Boil 2 minutes. Remove from heat.

Stir about ¼ cup hot mixture into egg yolks. Gradually stir yolk mixture into hot mixture. Cook just until mixture begins to bubble, stirring constantly.

Remove from heat; stir in margarine and vanilla. Cool filling in saucepan until lukewarm. Slice 2 or 3 bananas into cooled baked shell. Pour filling into cooled baked shell. Refrigerate 3 hours or until set. If desired, top with whipped cream. Store in refrigerator.

Makes about 8 servings

Peanut Butter Crunch Cake

No frosting is needed for this family-pleasing cake, which is also ideal to bring to a potluck or other gathering

Ingredients

1 (1lb. 2.5-oz.) pkg. pudding-
included yellow cake mix
½ cup firmly packed brown sugar
1 cup chunky peanut butter
1 cup water
¼ cup oil
3 eggs
½ cup semi-sweet chocolate chips
½ cup peanut butter chips
½ cup chopped peanuts

Heat oven to 350°F. Grease and flour 13 X 9-inch pan. In large bowl, combine cake mix, brown sugar and peanut butter at low speed until crumbly. Reserve ½ cup peanut butter mixture; set aside. To remaining peanut butter mixture add water, oil and eggs; blend at low speed until moistened. Beat 2 minutes at high speed. Stir ¼ cup of the chocolate chips and ¼ cup of the peanut butter chips into batter. Pour batter into greased and floured pan.

In small bowl, combine reserved ½ cup peanut butter mixture, remaining chocolate chips and peanuts; sprinkle evenly over batter.

Bake at 350°F. for 40-50 minutes or until toothpick inserted in center comes out clean. Immediately sprinkle with remaining peanut butter chips; gently press into top of cake. Cool completely.

makes about 15 servings
