On this page you will find recipes for two of my favorite Christmas Cookies.

Cocoa Kiss Cookies -White Chocolate Chunk Cookies

Cocoa kiss cookies

Delicious cookies with a Hershey Kiss surprise hidden in the middle!
These are definitely worth the little extra effort required to make.

Ingredients

1 cup butter, softened
2/3 cup sugar
1 teaspoon vanilla extract
1 2/3 cups all-purpose flour
¼ cup Hershey's Cocoa
1 cup finely chopped pecans
1 bag (9 ounces)Hershey's Kisses Milk Chocolates
Powdered Sugar

In large bowl, beat butter, sugar and vanilla until creamy. Stire together flour and cocoa; gradually add to butter mixture, beating until blended. Add pecans; beat until well blended. Refrigerate dough about 1 hours or until firm enough to handle. Heat over to 375° F. Remove wrappers from chocolate pieces. Mold scant tablespoon of dough around each chocolate piece, covering completely. Shape into balls. Place on ungreased cookie sheet. Bake 10 to 12 minutes or until set. Cool slightly, about 1 minutes; remove from cookie sheet to wire rack. Cool compltely. Roll in powdered sugar. Roll in sugar again just before serving; if desired.

Makes about 4 ½ dozen cookies

white chocolate chunk cookies

You can substitute vanilla milk chips in the place of the choccolate chunks

Ingredients

¾ cup sugar
¾ cup firmly packed brown sugar
1 cup shortening
3 eggs
1 teaspoon vanilla
1½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup coconut
½ cup rolled oats
½ cup chopped walnuts
12 oz. white chocolate baking bars, cup into ¼ to ½-inch chunks

Heat over to 350°F. In large bowl, combine sugar, brown sugar and shortening; beat until light and fluffy. Add eggs 1 at a time, beating well after each addition. Add vanilla; blend well. Add flour, baking powder,baking soda and salt; mix well. Stir in all remaining ingredients. Drop dough by rounded tablespoonsfuls 2 inches apart onto ungreased cookie sheets. Bake at 350°F. for 10 to 15 minutes or until light and golden brown. Cool 1 imute; remove from cookie sheets.

Makes about 5 dozen cookies
